The Conrad Manila, a luxury hotel chain of Hilton Worldwide that is strategically located at the center of property developments at the Manila Bay reclamation area, formally launched its Chinese Restaurant called China Blue by Jereme Leung on Monday, July 18, with a special lunch hosted by international master chef Jereme Leung himself, who flew in to Manila over the weekend for this event.

During the luncheon affair, the renowned Chinese master chef, who partnered with Conrad Manila to spearhead and curate the menu of his premium Chinese dining destination, introduced his unique concept of modern Chinese cuisine with a twist through a special tasting menu.
The Hong Kong born, award-winning Chef Jereme is well-known in the culinary industry as one of the pioneers of modern Chinese cuisine, creating contemporary dishes that blend perfectly with the more classical ones. He has made the rounds as Chinese executive chef all over Asia before opening his own food and beverage consultancy company based in Shanghai. Since then he has been a part of many wonderful new dining concepts all over Asia, including the far reaches of Maldives, where he created the concept of Conrad Maldives Rangali Island’s Ufaa restaurant.

Also seen at the successful launch of China Blue by Jereme Leung were Conrad Manila’s General Manager Harald Feurstein, the culinary team led by Executive Chef Thomas Jakobi, and China Blue’s Chef de Cuisine Eng Yew Khor who was handpicked by Chef Jereme Leung to oversee his Manila restaurant, and restaurant manager Mary Jane Domingo.

“It is certainly an exciting time for Manila to finally have a Chinese restaurant with an international celebrity master chef at the helm,” said Conrad Manila GM Feurstein. “With the world-class culinary innovation that Chef Jereme Leung is known for, we are excited to introduce a remarkable twist to a cuisine close to Filipinos’ palates.”
Complimenting Chef Jereme Leung’s modern take on Chinese cuisine is the equally well-appointed, modern restaurant interiors featuring signature blue chandeliers, hand-painted serveware, local artworks, private dining rooms, some with floor-to-ceiling glass windows offering a great view of the Manila Bay.

Early Chow Buzz favorites based on a total of three visits (China Blue soft opened last June 15) include the following: Sour plum, sweet vinegar marinated cherry tomatoes; Paper-thin crispy beef in sweet and spicy sauce; Shanghai-style soya braised fish; Stir-fried Shitake mushrooms with sweet vinaigrette sauce; Steamed Grouper Cantonese style; Fried spinach bean curd, spicy Sichuan eggplant and minced chicken sauce; house specialty steamed mushroom buns; and house specialty black gold egg custard buns.
